Louie’s Dishes: My Mother’s Best Homemade Meals

Submitted by Francesca Tero My mother, Eloisa Espiritu, otherwise known as “Louie”, built her own catering business from the talent of her two hands. Technically, four or six hands if you count the occasional times my sister and I are recruited to help her. Nonetheless, her business, “Louie’s Dishes”,  came to life in the kitchen of my childhood home when my mom decided to put her own twist on the viral “Sushi Bake” recipe that was taking over the Internet at the time. It’s important to note that ever since I was young, I’ve had the pleasure of tasting and appreciating the variety of dishes my mom had a knack…

Fried Rice: Growing Up With Me

The best fried rice recipe. When I was younger, I cooked this fried rice dish everyday after school. I started learning how to cook when I was in middle school because I thought I could cook better than the food I was eating at school for lunch from the school cafeteria. When we visited my relatives in Asia, I would show off, cooking my dish for my grandparents, relatives, and all their friends. If I need a quick bite or a fancy dinner to impress a special someone, this is my go to dish :)

One of my favorite kinds of cookies to make are crinkles—chocolate cookies that combine brownies and cookies in one with its fudgy centers and crispy powdered sugar outer layer. Its crinkled appearance—hence the name—accentuated by the powdered sugar gives it that cozy comfort-food snack and dessert that I look forward to eating every holiday season. In this article, I’ll be sharing my favorite crinkle recipe from Savor Easy that my loved-ones and myself enjoy!

One that has been especially on my mind is the good old classic Honey Walnut Shrimp. This iconic dish is not only popular at Asian establishments, but in Asian households. What I love most about this fan favorite is the addition of walnuts. They bring an extra depth to the food with its warm and nutty flavor. Overall, the sweet and salty combination is perfect for special occasions, especially Thanksgiving. Follow this recipe taken from Tiffy Cooks to make your taste buds sing this holiday!

Comfort Soup for the Fall – Sopas

With the cold fall weather, I tend to gravitate towards eating warm comfort foods, like soup! One of the first kinds of soup that may come to mind when you think of soup is chicken noodle soup. For me, I think of Sopas, which is the Filipino version of chicken noodle soup! It’s a creamy macaroni soup usually eaten for breakfast, if it’s cold, or if someone is sick, meaning it’s perfect for this time of year! In this article, I’ll be sharing my mom’s sopas recipe, which she’s been making for my family since I could remember.
