Comfort Soup for the Fall – Sopas

With the cold fall weather, I tend to gravitate towards eating warm comfort foods, like soup! One of the first kinds of soup that may come to mind when you think of soup is chicken noodle soup. For me, I think of Sopas, which is the Filipino version of chicken noodle soup! It’s a creamy macaroni soup usually eaten for breakfast, if it’s cold, or if someone is sick, meaning it’s perfect for this time of year! In this article, I’ll be sharing my mom’s sopas recipe, which she’s been making for my family since I could remember. 

Ingredients

  • ½ to 1 Onion, cubed
  • 2 Tsp of Minced Garlic
  • 1 Chicken Breast, boiled 
  • 16 oz. Chicken Broth 
  • 3 tbsp Vegetable Oil 
  • ⅓ Box of Elbow Macaroni noodles 
  • 1 Potato, cubed
  • 1-2 Carrots, cubed 
  • 1 Can of Vienna Sausage 
  • 12 oz. Evaporated Milk 
  • 6 cups of water 
  • Salt and Pepper to taste

Instructions

  1. Cube the onion, potato, and carrots. Slice the Vienna Sausage into small pieces.
  2. Boil the chicken breast in water and some chicken broth. Season with salt and pepper to taste.
  3. Shred the chicken after it is cooked. 
  4. Add cubed onions, minced garlic, and chicken to a pan and saute them in vegetable oil. 
  5. Add the chicken broth to the sauteed mix. 
  6. Add the macaroni noodles to the broth and let it cook to desired firmness. 
  7. Once at the desired firmness, add the cubed potato, cubed carrots, and sliced vienna last to the pot. 
  8. Add evaporated milk to the broth and stir. 
  9. Let cool before serving. 
  10. Serving: Add milk of your choice to your serving and mix! 
  11. Enjoy your creamy and delicious Sopas!
